Cucumber Raita

Ingredients: 1 C. plain yogurt 2 C. diced cucumber 2 T. chopped cilantro 1 T. chopped mint ½ tsp. cumin Celtic Sea Salt and pepper to taste Directions: Stir yogurt until creamy. Add in the rest of the ingredients and chill before serving. This lasts about 24 hours so make it shortly before you expect guests.

Indian Rice

Ingredients: 2 C. Indian basmati rice 1 T. vegetable or coconut oil 3 ½ C. water 2 tsp. Celtic sea salt Directions: Rinse rice very well in cold water until the water runs clear. Cover with water and let soak for at least 15 minutes or up to 2 hours. In a large saucepan, heat oil over medium-high heat. Drain rice and add to saucepan, stirring the rice to coat with oil. Add 3 ½ cups of water and bring to a boil. Reduce heat to the lowest setting and cook, covered for 25 minutes. Remove the saucepan from the heat and set the lid ajar for steam to escape. Leave to cool for 5 minutes. Fluff with a fork and spoon onto a platter (not a bowl, as this will cause the rice on the bottom to get mushy) and serve.
